  • 10g butter
  • 1 tsp (5ml) oil
  • 2 eggs
  • 30g (2 tbsps) grated cheese
  • Salt and pepper
  • 1 bottle Fortisip Compact, neutral flavour
  • 3 mushrooms, washed and sliced

Method:

  1. Begin by cracking the eggs into a mixing bowl, then whisk in the grated cheese, salt, and pepper until well combined.
  2. Next, add the bottle of Fortisip Compact to the mixture, ensuring it is thoroughly incorporated with the other ingredients.
  3. Heat the oil and butter in a suitable omelette pan over medium heat. Once hot, gently fry the sliced mushrooms until they just start to develop a golden color. Once done, remove the mushrooms from the pan and set them aside for later use.
  4. Pour the omelette mixture into the preheated pan, ensuring it spreads evenly. Using a fork, gently spread and mix the ingredients until the base of the omelette begins to set.
  5. Transfer the pan to the grill and cook the omelette until it rises and turns golden brown all over, ensuring it is thoroughly cooked.
  6. Once fully cooked, remove the pan from the grill and carefully place the cooked mushrooms on top of the omelette.
